Yummy Spiced Pancake/Waffle Mix.

Pancakes are super yummy and super easy to make. They offer a variety of yummy toppings and fix-ins. Mmmm chocolate chips! Plus the smell of pancakes is amazing!

I always add a little something in to make them extra special. Be that cinnamon and a little pumpkin puree, or some chocolate chips. We often top them with syrup, peanut butter or fruit butter.

I love making up a big batch and freezing some for later. Shelby and Emory can heat them up on their way out the door in the morning and get the day started right. Willow likes them topped with homemade cherry butter or apple butter. My blackberry syrup is also very tasty on these!

The recipe I use is a whole wheat recipe. The store bought mixes can also be stored in the freezer as well, I just prefer to make my own mixes. You can add all the healthy stuff like ground flax seed and ground chia seeds to store bought stuff also.

Which brings me to my next thing about the pancakes! Usually, I make them while the older girls are in bed, so I load them up with stuff like flax seed and chia seeds, sweeten them with honey and they are none the wiser. Willow keeps my secrets for now!

Before we get down to the nitty gritty.. an extra cool thing is, if you don’t feel like pancakes and waffles are more your style, dump a ladle full of this into your waffle maker. That’s right, mix it once and it has a dual purpose!

Yummy Spiced pancakes or waffles:

    1. 2 Tbsp Vegetable Oil

 

    1. 1-1/2 cups milk

 

    1. 1/4 tsp Sea Salt

 

    1. 1-1/2 cups Whole Wheat Pastry Flour

 

    1. 2 Tbsp Honey

 

    1. 1 Egg

 

  1. 2 tsp Baking Powder
  2. 1 tsp cinnamon (cardamom is also super good!)
  3. 3 tbsp ground d flax seed
  4. 2 tbsp ground chia seeds
  5. 1 tsp nutmeg
  6. Splash of vanilla

Mix the wet ingredients first, then add the dry. It helps everything mix better and it comes out with a better consistency.

I use an electric griddle to cut the cooking time down, if you are using a regular skillet, make sure to set some oil aside to grease the pan!
