Crockpot Swedish Meatballs

Not gonna lie, meatballs used to gross me the heck out. No rhyme or reason, they just really grossed me out, mushy hot balls of meat. Then, I had Willow, my old co-workers kindly put together a few meals, and gathered a few simple things from the store for me to make. This was especially helpful because Jacob was 4 hours away!

The pre-packaged meatballs were in one of the bags that was brought to my apartment! I figured what the hell? May as well make them instead of having them go to waste.

Still pretty grossed out, I dumped them into a pot filled with some red sauce I dumped out of a jar. I tossed some seasonings in and let the little balls bubble.

Let me tell ya..it wasn’t as bad as I thought. Shelby and Emmy loved them though! I figured if they liked it they must not be that horrible. I started digging into recipes that looked good and sounded good. Thank you Pinterest. Where would I be without you?

Swedish meatballs kept coming up, a creamy sauce, could be placed over noodles or potatoes and worked well in a crock pot. Hell yeah. I looked at the ingredients and immediately thought.. hell noooo. Allspice? Nutmeg? On MEAT? (Or meat like product? Which is probably what the store bought meatballs in a bag are)

I digress.. I was having one of those pull my fricken hair out days. All 5 kiddos that’s were here at the time we’re cranky as hell. The balls of meat called to me. I put the younger two down for their nap, occupied the three year old with some coloring, sent the older two out to go harass some friends. Within half an hour I had whipped up the sauce, got everything into the crock pot and the bread machine!

That meant there was still some time left to fold the laundry and do the dishes before the little ones woke up. And when Jacob got home all we would need to do is cook some noodles and dinner would be done!

There are butt loads of recipes out there for Swedish meatballs, the one I’ve come up with is a pretty good contender, if I do say so myself! My niece, Squeak, absolutely loves these, and asks for them every time we get to see each other.

Ingredients:

1 medium onion (chopped)

1 pint mushrooms (sliced)

3 cloves of garlic (minced)

2 tbsp olive oil

3 cups low sodium beef broth

2 cups whole milk

3 tbsp worchestershire sauce

2 tsp all spice

1 1/2 tsp nutmeg

1 tbsp dried parsley

Salt and pepper

1/2 cornstarch and water

2 bags of those creepy balls of meat

After dumping the meatballs into the crock pot…

1) slice, chop and mince the onion mushrooms and garlic. Heat the oil in a large skillet. Sautee the veggies over medium heat.

2) once the veggies are cooked, remove them from the pan. Add the beef broth, seasonings and the worchestershire sauce. Scrape the bottom of the pan for any brown bits.

3) just before it boils, add the milk in and stir constantly to prevent scorching.

4) add those mushrooms and onions from earlier back in, bring it all to a boil.

5) thicken with the cornstarch slurry. Pour over the meatballs. Cover and cook on high for 5 hours or low for 8 hours.

We love to eat this over noodles and with some home made bread. Now, I’ve never made meatballs from scratch cause I’m a lame ass. I plan to soon though! This is a huge recipe, but it makes extras for the freezer and for left overs.
